One of the best thing about living in Oregon is the fresh and local strawberries. And then of course there are the hazelnuts. Oh and the coffee. And the mountains. The coast. The gorge. And of course Portland’s naked bike ride. Let me rephrase: there are so many great things about living in Oregon, among which are the fresh, local strawberries. If you have been following me over the past week, you already know that I have an abundance of strawberries and yesterday in between consoling, playing, and feeding my daughter, I de-stemed, washed, and froze bags and bags of berries. In the process I got hungry and paused to whip up a batch of Chocolate Dipped Strawberry Creamsicles. Thanks goodness I did!
You ready for an incredible easy yet fantastic summer dessert?
Chocolate Dipped Strawberry Creamsicles
makes about 10 creamsicles
2 1/2 cups fresh strawberries
1 can full fat coconut milk
1-2 tbsp agave nectar
2 tsp vanilla extract
12 ounces semi-sweet chocolate
3 tbsp coconut oil
In a food processor, blend together strawberries until smooth. Add coconut milk, agave nectar, and vanilla and process until combined. Pour into popsicle molds and place in freezer until frozen all the way through.
Combine chocolate and coconut oil and melt in a microwave or double boiler.
Prepare a cookie sheet with a silicone mat or waxed paper. Dip frozen creamsicles into melted chocolate and set on cookie sheet. Return to freezer for a couple minutes. Enjoy!

I’m glad you’re gonna try it! I used a 14 fluid ounce can, but it doesn’t have to be exact. You can kind of adjust it to taste.

Is it possible to use regular milk instead of coconut milk?
You would want to use something richer and higher in fat than plain milk to get the same creaminess. If you’re talking about cows milk you would probably want to use cream, 1/2&1/2 or at least whole milk

I don’t think it would change the texture. If anything it would make the creamsicle a little thicker which wouldn’t be a bad thing. If you try it let me know what you think.

Your experience and artistry are amazing. I love following you. Although my family is not exclusively vegan, we do eat this way more than half of the year. Your knowledge and recipes are invaluable. And the desserts are especially encouraging as we have dear friends who we love to invite over, but the husband cannot eat gluten or most dairy products. Thankfully, your blog is a never-ending source of inspiration! So thank you again and again.
These are wonderful! I’ve made them three times now and Trader Joe’s just came out with a full-fat can of coconut milk, so I am trying them again. I can already tell they will be richer and creamier. I have one problem that I am hoping you can help me with. This didn’t happen to me the first time I made them, but I don’t know what I am doing differently now to cause a problem: After the chocolate is melted and I dip the creamsicle into it to coat it, the chocolate just seems to fall right off the creamsicle and not stick. Does that make sense? Has it ever happened to you? Is the chocolate cooling too much or am I letting the creamsicle thaw too much? Any help would be much appreciated!

Anyway I do understand what you are talking about with the chocolate. A while back I attempted to make s’more popsicles with marshmallow ice cream, dipped in chocolate and the chocolate was doing exactly the same thing you’re talking about. My best guess is the coconut oil that is in the chocolate is making it slide off. I use coconut oil to make the chocolate thinner, but perhaps omitting the coconut oil would help the chocolate to stick. That’s my best guess. My second guess would be that the fat in the coconut milk is making it not stick…however that doesn’t explain all the times it worked. I would suggest trying the first option and let me know what happens! If i discover something else, I will let you know.
